This work provides current and comprehensive information about bioactive compounds and their multiple benefits in human health from a scientific perspective, analyzing the various bioactive compounds that can be found in plants. The importance of bioactive compounds obtained from plants has increased because they have been shown to have antioxidant and antimicrobial effects. The book also explores the bioaccessibility and bioavailability of bioactive compounds and their stability to exert their health benefits, including the importance of gastrointestinal absorption for the utilization of these compounds.
