It covers a broad spectrum of topics including gut microbiota, traditional fermented foods, probiotics, prebiotics, synbiotics, and the microbial production of essential bioactive compounds such as vitamins, antioxidants, and peptides. The book also highlights advances in genetically engineered microbes, postbiotics, and microbial delivery technologies that enhance the stability and efficacy of nutraceutical products. Additionally, it emphasizes sustainable solutions like microbial valorization of food and agricultural waste to create value-added functional ingredients, aligning with circular economy principles. Practical aspects such as fermentation technologies, quality assurance, regulatory frameworks, and recent innovations in microbial patents are thoroughly addressed.
Aimed at researchers, academicians, food industry professionals, and advanced students, this book provides valuable insights into solving real-world challenges related to nutrition, food innovation, sustainability, and health through smart microbial technologies.

Shashi Kant Bhatia is a GRTF Tenure Track Faculty in the College of Transdisciplinary Studies, Kookmin University, Seoul, South Korea, with more than ten years of experience in the valorization of biowaste into valuable compounds.
